Make a tasty Acorn Stuffed Squash with Chef Allison Davis
INGREDIENTS:
* 1 acorn squash, split in half lengthwise, seeds removed, roast in oven at 375 until tender (35 min)
* 1 lb ground turkey
* 1-2 Tbsp Chinese five spice
* 1 small onion, finely chopped
* 1 zucchini, small diced
* 1/2 cup of mushrooms, diced
* Fresh sage, chiffonade
* 2 Tbsp corn starch
* Salt and pepper to taste
INSTRUCTIONS:
1. In a medium saute pan add a tbsp of olive oil, and saute onion and ground turkey, cook for five minutes.
2. Add the zucchini and mushrooms, spices, and season with salt and pepper. Saute for another 10 minutes.
3. Add the cornstarch and work in with the meat and liquid remaining after sweating the vegetables.
4. Add the stuffing into the roasted acorn squash and sprinkle with fresh sage, bake in the oven just until warmed for another 10 minutes. Enjoy!
