Chipotle Turkey Salad – Wild Thyme

Chipotle Turkey Salad

1 lb of pulled turkey leftovers

2 stalks of celery- small diced

1/4 white onion finely chopped

1/2 cup of dried cranberries

1/4 cup chopped pecan pieces

1/2 lb of cooked bacon chopped

1 bunch of green onions chopped

1 small granny smith apple- small diced

Spicy Chipotle Mayo

1 chipotle pepper in adobo sauce – finely chopped

1/4-1/2 cup of mayonnaise

1 Lemon Juiced

 

In a medium size mixing bowl mix together the first 8 ingredients. Add the lemon juice and stir together so the apples do not oxidize or brown.  In a small mixing bowl stir together the chipotle pepper and mayonnaise.  (If you prefer a spicier version of this sauce add in a TBSP of sriracha)  Mix in the mayonnaise mixture with the turkey salad and season with salt and pepper.  Can be made ahead and serve chilled.
