Shrimp and Grits (serves 4)

1 C stone ground grits

1/3 C grated white cheddar cheese

2 tsp cayenne pepper

2 C spinach

20 large, raw shrimp, peeled

1 garlic clove, minced

1 tsp smoked paprika

salt & pepper

2 T extra virgin olive oil

1 lemon, zested and juiced

  1. Cook grits according to package instructions.
  2. Meanwhile, prepare shrimp by seasoning with salt and pepper and dusting with paprika.
  3. When grits are approximately 5 minutes from being finished, heat skillet over medium heat and add 1 T olive oil.
  4. Add shrimp, careful to keep them in a single layer – this may require cooking them in shifts.
  5. Cook shrimp until just pink, approximately 2 minutes per side.
  6. Remove shrimp from skillet and add 1 T olive oil and lemon juice and zest. Scrape up any drippings in pan and cook for 1 minute.
  7. When grits are cooked, add cheese, cayenne and spinach and stir to combine. Spinach will wilt as it mixes into grits.
  8. Add shrimp back to skillet to warm them for about 30 seconds.
  9. Serve shrimp and sauce over grits.
