Shrimp and Grits (serves 4)
1 C stone ground grits
1/3 C grated white cheddar cheese
2 tsp cayenne pepper
2 C spinach
20 large, raw shrimp, peeled
1 garlic clove, minced
1 tsp smoked paprika
salt & pepper
2 T extra virgin olive oil
1 lemon, zested and juiced
- Cook grits according to package instructions.
- Meanwhile, prepare shrimp by seasoning with salt and pepper and dusting with paprika.
- When grits are approximately 5 minutes from being finished, heat skillet over medium heat and add 1 T olive oil.
- Add shrimp, careful to keep them in a single layer – this may require cooking them in shifts.
- Cook shrimp until just pink, approximately 2 minutes per side.
- Remove shrimp from skillet and add 1 T olive oil and lemon juice and zest. Scrape up any drippings in pan and cook for 1 minute.
- When grits are cooked, add cheese, cayenne and spinach and stir to combine. Spinach will wilt as it mixes into grits.
- Add shrimp back to skillet to warm them for about 30 seconds.
- Serve shrimp and sauce over grits.
