Roasted Salmon with Spinach-Cucumber Sauce (serves 4)
4 – 6 oz portions of salmon
4 tsp extra virgin olive oil
2 tsp Kosher salt
2 tsp freshly ground pepper
Sauce
1 shallot, minced
2 tsp extra virgin olive oil
2 T sherry
4 C baby spinach
1 medium cucumber, peeled, seeded and coarsely chopped
1/3 C sour cream
juice of half a lemon
1 tsp Kosher salt
½ tsp freshly ground black pepper
- Preheat oven to 400°
- Place salmon on sheet pan and drizzle with olive oil and season with salt and pepper
- Roast salmon until desired doneness, approximately 14 minutes for medium rare.
- Meanwhile, sauté shallot in olive oil over medium-low heat until soft, then add sherry and cook until absorbed
- Add all sauce ingredients to a blender and blend until combined.
- Serve salmon warm with sauce drizzled over and/or on the side.
