Roasted Salmon with Spinach-Cucumber Sauce (serves 4)

4 – 6 oz portions of salmon

4 tsp extra virgin olive oil

2 tsp Kosher salt

2 tsp freshly ground pepper

Sauce

1 shallot, minced

2 tsp extra virgin olive oil

2 T sherry

4 C baby spinach

1 medium cucumber, peeled, seeded and coarsely chopped

1/3 C sour cream

juice of half a lemon

1 tsp Kosher salt

½ tsp freshly ground black pepper

  1. Preheat oven to 400°
  2. Place salmon on sheet pan and drizzle with olive oil and season with salt and pepper
  3. Roast salmon until desired doneness, approximately 14 minutes for medium rare.
  4. Meanwhile, sauté shallot in olive oil over medium-low heat until soft, then add sherry and cook until absorbed
  5. Add all sauce ingredients to a blender and blend until combined.
  6. Serve salmon warm with sauce drizzled over and/or on the side.
