Risotto – serves 4-6

1 C Arborio rice

1 T olive oil

2 tsp butter

1 onion, diced

2 cloves garlic, minced

1/2 C dry white wine

4 C broth (vegetable, chicken or beef)

  1. Pour broth into a saucepan and heat over low heat until warm.
  2. In a separate skillet, melt butter in olive oil over medium heat.
  3. Add onion to pan and sauté until soft.
  4. Add garlic and sauté 30 seconds
  5. Add rice and stir constantly for approximately 2 minutes.
  6. Add wine and simmer until reduced and rice has absorbed it.
  7. Begin adding broth ½ C at a time, stirring rice constantly.
  8. Continue adding broth and stirring until rice is smooth and creamy, approximately 45 minutes (you may not need all the broth)
  9. Serve warm with freshly grated parmesan cheese
