Healthy Red Beans and Quinoa “Rice” – serves 2-3

1 can kidney beans

smoked turkey sausage (optional)

2 tsp olive oil

1 medium onion, diced

1/2 green pepper, diced

1 jalapeno, seeded and diced

1 garlic cloves, minced

½ tsp Kosher salt

¼ tsp pepper

½ tsp onion powder

½ tsp garlic powder

1 tsp dried thyme

1 tsp cumin (or more – to your liking)

1/2 C quinoa

  1. Cook quinoa according to package directions
  2. sauté onions, green pepper and jalapeño in olive oil over medium heat until softened
  3. add garlic and sauté approx 30 seconds. Add salt and pepper.
  4. Reduce heat to medium-low, add kidney beans with their juices and stir all until

combined, then add spices. Simmer until liquid is absorbed.

  1. if using, dice sausage and sauté in additional 2 T olive oil until browned, then add to

beans

  1. serve quinoa and top with red bean combination
