Healthy Red Beans and Quinoa “Rice” – serves 2-3
1 can kidney beans
smoked turkey sausage (optional)
2 tsp olive oil
1 medium onion, diced
1/2 green pepper, diced
1 jalapeno, seeded and diced
1 garlic cloves, minced
½ tsp Kosher salt
¼ tsp pepper
½ tsp onion powder
½ tsp garlic powder
1 tsp dried thyme
1 tsp cumin (or more – to your liking)
1/2 C quinoa
- Cook quinoa according to package directions
- sauté onions, green pepper and jalapeño in olive oil over medium heat until softened
- add garlic and sauté approx 30 seconds. Add salt and pepper.
- Reduce heat to medium-low, add kidney beans with their juices and stir all until
combined, then add spices. Simmer until liquid is absorbed.
- if using, dice sausage and sauté in additional 2 T olive oil until browned, then add to
beans
- serve quinoa and top with red bean combination
