Beef with Broccoli (serves 4)

1 to 1 ½ lbs skirt, hanger or flank steak, cut into strips

3 ½ T sesame oil, divided

1 crown broccoli, cut into bite-sized florets

1 1-inch piece of ginger, minced

2 cloves garlic, minced

½ a medium onion, diced

3 T lite soy sauce

1/3 C beef broth

  1. Preheat oven to 250°
  2. Steam broccoli in steamer 2-3 minutes.
  3. Season steak with salt and pepper.
  4. Heat skillet over medium-high heat. Add 3 T sesame oil and steak in thirds until all steak is browned. Remove to heat-proof container and place in oven.
  5. In same skillet, reduce heat to medium and add last ½ T sesame oil. Add ginger and onion and sauté until softened, about 2 minutes.
  6. Add garlic and sauté about 30 seconds, being careful not to brown it.
  7. Add beef broth and soy sauce and cook until reduced by about 1/3, scraping up any browned bits.
  8. Pour sauce over steak and broccoli and stir to coat evenly.
  9. Serve over brown rice or quinoa.
