Mini Hot Browns (makes 30)

2 packages of phyllo cups

1 lb ground turkey

15 grape tomatoes, halved

4 slices of bacon

2 T all-purpose flour

2 T butter

1 C milk

1/3 C shredded cheddar

1/4 C grated parmesan

¼ tsp nutmeg

salt and pepper

  1. Brown turkey over medium heat, breaking up into small bits as it cooks.
  2. Cook bacon to desired crispness. Let cool, then cut into small pieces.
  3. Melt butter in saucepan over medium-low heat. Add flour and whisk together, cooking for approximately 3 minutes.
  4. Add milk to saucepan and continue to whisk until sauce thickens and coats the back of a wooden spoon, approximately 15-20 minutes.
  5. Add nutmeg and cheeses, stirring to combine.
  6. Preheat oven to 300°.
  7. Set phyllo cups on baking sheet and fill with turkey, then top with sauce, bacon and half a tomato.
  8. Place baking sheet in oven and warm hot browns until heated through.

(Each step can be done ahead of time, then hot browns put together and warmed when you want to serve them)
