·         1 lb potatoes, peeled and cubed

·         8 oz onions, peeled and diced

·         1 ½ cups oil for frying

·         Salt and Freshly Ground Black Pepper

·         6 large eggs

·         1 large clove garlic, peeled, and minced

·         8 oz spinach, drained weight (freshly wilted)

·         2 cups grated Cheddar

·         Pinch of nutmeg
