Mediterranean Salmon Salad
Ingredients:
* 1 (7oz) can Salmon (BPA-free can/wild-caught)
* 2 medium carrots, finely chopped
* ½ cucumber, finely chopped
* 10 kalamata olives, pitted
* 3-4 radishes thinly sliced or chopped
* 1 Tbsp. chopped parsley
* 1 Tbsp chopped fresh mint
* 1 Tbsp chopped fresh dill
* 1-2 Tbsp red wine vinegar
* 3 T. EVOO
* sea salt and pepper to taste
* Fresh lemon wedges for garnish
Directions:
● Drain Salmon ● Add the rest of ingredients and toss to coat. Garnish with fresh lemon wedges
