Wild Thyme – Chipotle Cauli Rice Bowl
Ingredients
Red pepper, diced
Yellow pepper, diced
Jalepano, finely diced
Red Onion, diced
1 Chipotle Pepper, minced
1 bag Cauli Rice-16 oz
1 lb. Ground Turkey
1 Tb. Cumin
1 4 oz Can of Green Chilies
Salsa Verde- 1/2 cup
2 Tb. Chili powder
1 Tb. Minced Garlic
1 bunch Chopped Cilantro
1 Lime, juiced
Instructions
Heat large skillet on medium high heat. Brown the turkey, season with salt, pepper and ground cumin. Drain and set aside. In the same skillet, saute onions and red & yellow peppers for about 3 min. Add jalepano, garlic and cauli rice. Saute for another 2-3 mins. Add chipotle pepper, chili powder, green chilies and salt and pepper. Taste and readjust seasoning as needed. Spritz with fresh lime and add in cilantro before serving. Top with the salsa verde.
