Chicken and Cauli “Rice” Casserole
Sauce:
- 1 cup cashews soaked in boiling water for 30 minutes
- 3/4 cup chicken stock
- 2 tsp thyme
- 1 tsp salt
- Juice from 1/2 small lemon
Casserole:
- 3 tbs olive oil
- 5 cloves garlic minced
- 2 shallots minced
- 3 cup grated cauliflower (box grater works AWESOME)
- Roasted Broccoli Florets
- Sliced Mushrooms
- 1 1/2 tsp salt
- 2 cups shredded cooked chicken
- Optional: 1 cup shredded cheddar cheese.
