Wild Thyme – 3 Ways to Prepare Fish

Ingredients

Macadamia Orange and Rosemary Crusted Cod Fillets

  • 6 Cod Filets ( Wild Caught)
  • 8 ounces of Macadamia Nuts –Roasted and Salted is acceptable
  • 3 sprigs of fresh rosemary
  • 1 orange – zested
  • 3 TBSP coconut oil
  • Salt and Pepper to taste

Instructions

Preheat the oven to 400 degrees

Line a cookie sheet with parchment and paper and place the cod filets on the cookie sheet.  Drizzle with melted coconut oil and season generously with salt and pepper.

In a food processor place the macadamia nuts and pulse until it resembles a coarse meal consistency.  Pour into a medium size mixing bowl and add the orange zest and rosemary and stir until evenly mixed.   Sprinkle the macadamia nut mixture on top of each cod filet and pat down to evenly coat the top of each filet.

Before place the fish in the preheated oven, switch the setting on the oven to a low to medium broil.

Place the fish on the top rack and allow the macadamia to broil for about 6-8 minutes depending on thickness of the cod filet. Keep a close eye so the nuts do not burn.  If the fish is very thick and the topping is getting to dark, simply drop the tray to the lower rack and allow to cook an additional 2 minutes.

Remove from the oven and serve immediately! Enjoy!
