KYSU working with KY chefs to find new ways to eat Asian Carp

FRANKFORT, Ky. (WTVQ) – Kentucky State University is working to find new ways to eat Asian Carp.

Asian Carp is an invasive species that is filling many lakes and rivers from Louisiana to the Great Lakes.

David Neville is a KYSU alumni and said he was asked to help KYSU market the Asian Carp to different types of chefs in Central Kentucky.

“The name carp for Americans is a draw back,” he said.”But Asians love carp, Europeans love carp.”

He pitched the idea to Risa Booe, a Thai native and chef at Miss Risa’s Thai restaurant in Frankfort.

Booe said it’s going in her curry recipe.

Miss Risa’s is just one of the chefs in Central Kentucky giving the carp a shot. Neville said there are many others getting creative with the fish.

Neville said he sees the supply and he knows there’s a demand, he said he just has to get the word out.
