Pork on Pork Chop Dinner

Serves 6
Ingredients:
6- boneless pork loin chops
½ pound bacon, diced
2-medium onions, sliced
3-cups fresh mushrooms, diced
2-clove garlic, grated
2-TBSP butter
2-tsp black pepper
½-tsp onion powder
¼-tsp red pepper flakes
2-TBSP bourbon
2-TBSP heavy cream
Juice from ½ lemon or 1-TBSP liquid lemon
6-7 fresh sage leaves, minced
1-TBSP honey
Directions:
- Mix the black pepper, onion powder and a pinch of salt.
- Rub the pork chops down with spice mix.
- Preheat a large cast iron skillet.
- Place bacon and butter in skillet and cook until bacon is crispy, remove bacon and set aside.
- Place the pork chops in skillet and brown about 4-5 mins, flip and brown on other side, remove from skillet and tent with foil to let rest.
- Add the onions, mushrooms, garlic, red pepper flakes, sage and honey, cook until tender.
- Place the pork chops and bacon back in on top of onion mix.
- Pour the bourbon in and set on fire, stir till fire is gone.
- Add the lemon and cream stir.
- Serve with rice or mashed sweet tators.
