Chef Allison Eastland Shows us a Tasty Chicken over Farro Dish!

Sweet Potato, Avocado and Chicken over Farro (serves 2)

1 sweet potato, sliced into ¼” thick slices

1 T extra virgin olive oil

Kosher salt

Pepper

1 chicken breast

1 tsp extra virgin olive oil

¼ C Farro

½ – 1 avocado, sliced

  1. Preheat oven to 400°
  2. Toss slices of potato with olive oil. Season with salt and pepper to taste.
  3. Place slices on a baking sheet in a single layer and roast until bottom side begins to brown, approximately 12-15 minutes. Turn slices and continue roasting until both sides are browned, approximately an additional 10 minutes.
  4. Pound chicken to ½” thickness. Season with salt and pepper. Warm sauté pan over medium heat and add olive oil. Once oil coats bottom of skillet, sauté chicken, approximately 5 minutes per side, depending on size. (Alternatively, you can cook the chicken on a grill pan – spray with cooking spray or olive oil and follow same cooking instructions as sautéing). Allow chicken to cool for at least 10 minutes, then slice.
  5. Cook farro according to package instructions.
  6. Place farro in bottom of container and top with chicken, potato slices and avocado.
