Chef Allison Eastland Shows us a Tasty Chicken over Farro Dish!
Sweet Potato, Avocado and Chicken over Farro (serves 2)
1 sweet potato, sliced into ¼” thick slices
1 T extra virgin olive oil
Kosher salt
Pepper
1 chicken breast
1 tsp extra virgin olive oil
¼ C Farro
½ – 1 avocado, sliced
- Preheat oven to 400°
- Toss slices of potato with olive oil. Season with salt and pepper to taste.
- Place slices on a baking sheet in a single layer and roast until bottom side begins to brown, approximately 12-15 minutes. Turn slices and continue roasting until both sides are browned, approximately an additional 10 minutes.
- Pound chicken to ½” thickness. Season with salt and pepper. Warm sauté pan over medium heat and add olive oil. Once oil coats bottom of skillet, sauté chicken, approximately 5 minutes per side, depending on size. (Alternatively, you can cook the chicken on a grill pan – spray with cooking spray or olive oil and follow same cooking instructions as sautéing). Allow chicken to cool for at least 10 minutes, then slice.
- Cook farro according to package instructions.
- Place farro in bottom of container and top with chicken, potato slices and avocado.
