Vegan Date Truffles
Date Energy Balls (Vegan, Paleo)
makes about 2 dozen
Ingredients:
- 2 cups cashews, other nut/seed of choice
- 1 cup shredded unsweetened coconut
- 2 cups soft Medjool dates, pitted
- 1 cup of dried fruit (preferred freeze dried strawberries)
- 1/2 cup chocolate chips (dairy free, nut free, soy free)
- 2 tablespoons coconut oil
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
Directions:
In a large food processor fitted with an “S” blade, process the cashews and coconut until crumbly. Add in the dates, fruit, chocolate, coconut oil, vanilla and sea salt and process again until a sticky, uniform batter is formed. Roll mixture into balls and roll in cocoa powder or powdered sugar.
