Orange ginger glazed carrots
1 bunch Heirloom carrots whole
1 knob (1 1/2 TBSP) fresh ginger peeled and grated
2 garlic cloves
1 orange
Salt and pepper
(Pinch of nutmeg) optional
Parsley or thyme sprigs for garnish
Preheat the oven to 375 degrees. Place the whole carrots on a parchment lined baking sheet and drizzle with olive oil or coconut oil and season with salt and pepper. Roast in the oven for 20 minutes or until the carrots are fork tender and start to caramelize in the oven.
Meanwhile, in a medium sauté pan heat 2 Tbsp of butter and add garlic and grated ginger. Add orange zest and orange juice and simmer. Season with salt and pepper and set aside. Once carrots are ready pour glaze over the top and enjoy.
