Fried Corn and Bacon 

 

2 ears of corn – cut off the cob

3 strips of thick bacon – cut into 1 inch pieces

1/2 onion small diced

salt and pepper to taste

 

In a medium skillet, saute the bacon pieces in a saute pan until crispy. Using a slotted spoon remove the bacon from the heat and lay on a paper-towel to drain.  Keep the bacon drippings in the pan and while the heat is still on add the chopped onions and saute for about 2 minutes until translucent.  Add the fresh cut corn off the cob to the skillet and saute with the onions for another 2 minutes.  Add the bacon pieces back in to the mixture and season to taste with salt and pepper.
