Fried Chicken Bites
3 boneless skinless chicken breast, cut into 2-inch pieces
2 cups buttermilk
2 TBSP hot sauce (preferably Frank’s hot sauce)
1 TBSP kosher salt
1 TBSP pepper
In a medium bowl marinate the chicken overnight if possible with buttermilk, hot sauce, and salt and pepper.
Seasoned Flour
1 1/2 cup flour
1 TBSP cajun seasoning
1 TBSP salt
1 TBSP pepper
1 TBSP ground garlic
Mix all the ingredients and set aside in a medium bowl.
Heat a large skillet with about 2 cups of canola oil. Make sure the oil has had enough to heat to about 360 degrees. Drain the chicken from the buttermilk and gently place in the seasoned flour mixture. and gently lay in the hot oil to brown and cooked through to an internal temperature of 165 degrees. Make sure you have a paper towel lined sheet to the side and a slotted spoon to remove the chicken from the hot oil.
Dip the fried chicken in a chipotle mayonnaise or honey dijon blend.
