Banana Cookie Butter French Toast Sandwiches
1/4 cup milk
4 eggs, lightly beaten
1 tsp vanilla extract
1 tsp sugar
1/2 tsp salt
6 slices sourdough whole-grain bread
5 TBSP cookie butter
1 cup sliced bananas
2 TBSP Canola oil
1 tsp powdered sugar
Combine first five ingredients in a shallow dish.
Spread each of the three bread slices with the cookie butter. Arrange the banana slices overeach slice of bread. Top sandwiches with remaining three bread slices.
Heat oil in a large nonstick skillet over medium-high. Working with 1 sandwich at a time, place into milk mixture, turning gently to coat both sides. Carefully place coated sandwiches into the pan. Cook 2 minutes on each side or until lightly browned. Cut each sandwich into 4 triangles. Sprinkle evenly with powdered sugar.
