2 acorn squash cut in half, seeds removed and sliced in 1 inch pieces

1/2 lb of bacon

1/4 cup maple syrup

1/2 red onion sliced thin

1 honey crisp apple sliced

Fresh herbs (personal preference rosemary)

Salt and pepper

 

Chop the bacon into 1 inch pieces. Place the acorn squash apple slices and onion slices in a glass casserole dish.  Top with raw bacon.  Drizzle with olive oil and season with salt and pepper.  Drizzle on the maple syrup, sprinkle whatever fresh herbs you like and place in a preheated oven at 375 degrees for 25 min or until the squash is soft and fork tender.  Enjoy
