Mediterranean Chicken over Couscous (serves 4)

1 – 1 1/3 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

3 T olive oil, divided

3 T capers

¼ C roasted red peppers, diced

1/3 C kalamata olives, sliced

juice of a lemon

2 garlic cloves, minced

1 C Israeli couscous

  1. Heat 1 T olive oil in small pot over medium heat. Add half of garlic and sauté for a few seconds.
  2. Add couscous and toast by stirring for approximately 5 minutes. Cook in water or chicken broth according to package directions.
  3. Salt and pepper chicken.
  4. Heat additional olive oil in skillet.
  5. Add chicken to skillet. Sauté until browned all over. (Allow chicken to brown before stirring to avoid it sticking to pan). Add rest of garlic and sauté for a few seconds.
  6. Add capers, red peppers, olives and lemon juice once chicken is cooked through.
  7. Serve chicken over couscous.
