Mediterranean Chicken over Couscous (serves 4)
1 – 1 1/3 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
3 T olive oil, divided
3 T capers
¼ C roasted red peppers, diced
1/3 C kalamata olives, sliced
juice of a lemon
2 garlic cloves, minced
1 C Israeli couscous
- Heat 1 T olive oil in small pot over medium heat. Add half of garlic and sauté for a few seconds.
- Add couscous and toast by stirring for approximately 5 minutes. Cook in water or chicken broth according to package directions.
- Salt and pepper chicken.
- Heat additional olive oil in skillet.
- Add chicken to skillet. Sauté until browned all over. (Allow chicken to brown before stirring to avoid it sticking to pan). Add rest of garlic and sauté for a few seconds.
- Add capers, red peppers, olives and lemon juice once chicken is cooked through.
- Serve chicken over couscous.
