Avo-Tahini Toast 

 

1 tsp fresh lemon juice

Dash of kosher salt

1/2 ripe avocado

1 slice of whole grain bread

3 graoe tomatoes, quartered

2 pitted kalamata olives, chopped

1 hard boiled eggs, peeled and sliced

1 tsp tahini

 

Combine juice, salt, avocado, and tahini in a small bowl. Mashing with a fork to make a smooth paste.  Spread avocado mixture evenly over toast, and top with tomatoes, olives, and egg. Season with salt and pepper.  and Drizzle with any additional tahini if desired.
