Fried artichokes

 

1 can artichoke hearts drained and patted dry

1 cup of flour

1 TBSP salt

1 tsp olive oil

1-2 cups of club soda

2 cups of sunflower oil or one with a similar smoke point

 

Heat the oil in a heavy bottom pan in a medium to high heat until it reaches 360 degrees Fahrenheit.

In a medium bowl mix the flour salt olive oil and club soda until smooth.  (The batter should resemble a pancake batter consistency)

Once the artichokes are patted dry and drained slowly dip into the batter and gently lay in the hot oil.  Fry for about 1 minute and turn and fry for another minute until the entire artichoke is an even golden brown.

Remove from the oil and let drain on a paper towel lined sheet.  Season with salt and pepper while the artichokes are still hot.

Repeat the process until finished.  Enjoy with a warm marinara for dipping.
