Christmas Quiche

Ingredients

 

9 inch unbaked pie shell

1/2 cup chopped broccoli

1/2 cup diced red bell peppers

1/2 cup thinly sliced onions

1/4 cup finely chopped sun dried tomatoes

1/2 cup shredded smoked Gouda (or cheese of choice)

1/2 pound of Italian sausage (cooked) or diced ham, or chopped bacon (meat is optional)

5 eggs

1 1/2 cup of cream

Salt and pepper to taste

 

 

Prepare the pie crust in the pie plate and crimp the edges.  Preheat the oven to 375 degrees

 

In a medium sauté pan add the vegetables with 1 Tbsp of oil and sauté just until softened.

 

In a mixing bowl add 5 eggs and 1 1/2 cups of cream.  Whisk throughly and season with salt and pepper.

 

Add the sautéed veggies to the prepared pie crust and pour the egg mixture overtop. Sprinkle the cheese on top.  Season again with salt and pepper.

 

Bake at 375 for 45 minutes or until the quiche is set.
