Wild Thyme – Shrimp Mac and Cheese with Bacon
Shrimp Mac & Cheese with Bacon (4/12):
2 cups cooked penne pasta
1/2 lb shrimp-cooked, peeled & devined with tails removed
1/2 lb bacon-cooked and crumbled
1/2 stick butter
1/2 cup flour
1 1/2-2 cups milk
1 cup pepperjack cheese-shredded
salt & pepper to taste
1/2 tbsp nutmeg
1/4 cup panko bread crumbs
In a small saucepan, make the cheese sauce by first starting with melting the butter. Add in the flour and whisk to make a smooth paste. Add the milk and stir continuously until it’s hot and the liquid has thickened. If too thick, add 1/2 cup more milk. Once the mixture coats the back of the spoon, add in the pepperjack, nutmeg, and season to taste with salt and pepper. Stir in the penne, 1/3 of the bacon, and all of the shrimp. Stir to combine. Pour in a baking dish and top with panko and remaining bacon. Bake at 350 until bubbly and golden brown~approx 25-30 minutes.
