Herb rub

1 bunch of rosemary minced
1 bunch of fresh thyme
1 bunch of fresh parsley
6 garlic cloves
1/4 cup of Dijon mustard
2 Tbsp Worcestershire sauce
Salt and pepper
1/2 cup of olive oil

Add the first seven ingredients in a food processor and pulse four to five times to mince all of the ingredients together.  Turn the food processor to low and slowly add in the olive oil to form a smooth paste.

Season the beef brisket with salt and pepper on all sides and rub down with herb mustard marinade.

Place in oven in deep pan with aluminum foil wrap at 275 for 8-12 hours depending on the size of the brisket.

You want it to pull a part with a fork.

Slice and serve.
