Mom To Mom – No Bake Cookies

Speaker 1:           Today on Mom To Mom, Chef Kate has a wonderful kid-friendly no bake cookie recipe for us.

Speaker 1:           Alright moms, I’ve got Chef Kate here with us. It’s Valentines day. Do you need another reason to make no-bake cookies?

Chef Kate:           And to eat chocolate!

Speaker 1:           To eat chocolate.

Chef Kate:           I think that’s the quintessential Valentines day.

Speaker 1:           Perfect.

Chef Kate:           Yes.

Speaker 1:           Alright, what you got for us today?

Chef Kate:           I’m going to make a no-bake cookie. So, I love no-bake cookie’s because it’s good for your kids to get involved in the kitchen, and my version is no refined sugar, it’s got whole oats so it’s actually good for them, and they can get involved and kind of make it their own too, which kids love. So, there you have.

Speaker 1:           Alright, well let’s just jump right into it.

Chef Kate:           Yes.

Chef Kate:           Melt the honey and coconut oil in a saucepan over medium heat. Bring it to a boil and let it cook for about one minute. Stir in the peanut butter, almond milk, and vanilla. Remove from the heat. Add the salt, cocoa powder and oats, stir everything to combine really well.

Chef Kate:           Drop your dough onto a parchment-lined baking sheet, sprinkle with sprinkles, coconut, whatever you like, and throw into the refrigerator for about fifteen minutes, until everything’s nice and firm. Bring them out, let them sit for about a minute room temperature, and enjoy.

Chef Kate:           And so these have been in the refrigerator for about fifteen, twenty minutes, just until they’re nice and firm. And I put coconut on top for the adults, but for kids, sprinkles would be really fun. You can let them kind of pick and choose what they want to put on top.

Speaker 1:           Exactly, and it was so easy.

Chef Kate:           Yes, they took literally fifteen minutes, one pot.

Speaker 1:           Exactly.

Chef Kate:           And fill up parchment for easy clean-up, so let’s give them a taste.

Speaker 1:           Oh my gosh, I’m so excited.

Chef Kate:           Reminds me of childhood.

Speaker 1:           Oh, they’re delicious, I love those big oats, too.

Chef Kate:           Mm-hmm (affirmative), they’re chewy, chocolatey, not too sweet.
