Country Bling Bourbon Bacon Bread Puddin’

Serves 6
Ingredients:
1 cup sugar
¼ cup honey
4-5 cups cubed stale biscuits, donuts or brioche bread
6 eggs, beaten
1 1/2 cup whole milk
1 1/2cup heavy cream
3-TBSP bourbon
1 pound bacon, cooked and crumbled
1/2 cup butter, melted
2 tsp vanilla
Topping:
1 cup light brown sugar, packed
1/4 cup butter, softened
1-tsp cinnamon
1cup chopped pecans (optional)
Pinch of salt
Glaze:
3-4 TBSP bourbon
2 cup powder sugar
Drippings from bacon
1/2 tsp vanilla
Directions:
- Preheat oven to 350 degrees. Grease a 9×13 or 11×15 baking pan. (depending on how thick you want your pudding.
- In a bowl combine granulated sugar, honey, cream, bourbon, melted butter, eggs, milk, vanilla together in a large bowl.
- Put cubed bread and bacon in wet mixture, let it sit for 10-15 minutes.
- In another bowl, mix the topping by combining brown sugar, cinnamon, salt, pecans, and butter.
- Pour bread mixture into baking pan.
- Spread brown sugar mixture over the top and bake for 40 minutes, or until set, remove and let set for 15-20 mins.
- Make the glaze by adding all the ingredients to a bowl and whisk, If you want it thinner you can use milk or water by the Tablespoon until desired thickness.
- Pour glaze over bread pudding.
