Winter Guacamole- Wild Thyme

  • ¼ cup minced white onion
  • 2 to 4 serrano chiles (including seeds) minced
  • 1 tsp coarse salt
  • 3 to 4 large ripe avocados, pitted, peeled and coarsely chopped (about 2 lbs)
  • 3 TBSP fresh lime juice
  • ¾ cup peeled and diced pear
  • ¾ cup red seedless grapes, halved
  • ¾ cup pomegranate seeds, divided (about 1 to 2 pomegranates)
  • White Corn Tortilla Chips

Combine the onions, chiles and salt in a large bowl, forming a rough paste. Fold in the avocados and lime juice. Add the pears, grapes, and ½ cup of the pomegranate seeds.  Place in a serving dish and top with the remaining pomegranate seeds. Serve the guacamole with tortilla chips.
