High protein Pancakes Muffins
INGREDIENTS:
* 3 overripe smashed bananas * 3 eggs * 3 cups kodiak or paleo pancake mix * 1.5 cups of milk, almond milk or coconut milk * 1 tablespoon of cinnamon * 1 tablespoon of vanilla * Gluten free Chocolate chips (optional)
INSTRUCTIONS:
Combine all ingredients with a hand mixer or by hand. Scoop into greased mini muffin pan and bake at 350 for 15 mins or until toothpick comes out clean. Bake for 25-30 mins in a regular muffin pan.
