Pistachio Crusted Chicken

2 salmon filets

1 cup of pitachios, Shelled

1 Tbsp of coconut oil

Salt and pepper to taste



 

Preheat the oven to 400 degrees.

Finely chop the pistachios or place in food processor.  Place the salmon on a parchment lined sheet tray and drizzle with coconut oil.  Season each salmon filet with salt and pepper.  Top with chopped pistachios.

Place the pistachio crusted salmon fillets in the oven and bake for seven-ten minutes.  Remove from the oven and enjoy!
