½ Cup Rice Wine Vinegar
2 TBL Mustard
2 TBL Apple Juice
2 TBL Pomegranate Juice
1 TBL Chipotle Pepper
1 Cup Margarine
½ Cup Brown Sugar
½ Cup Honey
2 TBL Yellow Mustard
2 Cups of Your Favorite BBQ Sauce (Sonny’s Sweet or Sweet Baby Ray’s )
¼ Cup Apricot Preserves
¼ Cup Apple Juice
1 Cup of Your Favorite Sweet Rib Rub
1 Cup Brown Sugar
¼ Cup Chipotle Seasoning (Lowery’s)
In separate bowls, mix together all of the ingredients for your Slather, Rib Wrap and Sauce. Set Rib Wrap and Sauce aside.
Remove the membrane from the ribs and pat dry. Equally distribute the Slather over the top and bottom of each rib. Sprinkle with the Rib Rub and the Chipotle Seasoning on both the top and bottom of the ribs. Wrap in plastic wrap for 2 - 3 hours. Remove ribs from the plastic wrap and sprinkle the top of the ribs with brown sugar.
Start your smoker and set to 250 degrees with either apple wood or hickory. Place ribs on smoker for 2 hours. Remove and apply Rib Wrap mixture. Wrap in foil and return to the smoker for another 2 to 3 hours or until tender. Remove from smoker and remove foil. Evenly apply Sauce and grill on direct medium heat for 4 to 5 minutes per side.
