1 lb. uncooked Kentucky Proud freshwater prawns, peeled and deveined
3 slices Kentucky Proud country bacon, chopped
1 cup chopped Kentucky Proud green bell pepper
1/4 cup chopped Kentucky Proud onion
2 cups diced Kentucky Proud tomatoes
3/4 cup water
3/4 cup uncooked rice
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon fresh Kentucky Proud thyme
1 teaspoon garlic powder
1 can corn (optional)
Cut the prawns into halves. Cook the bacon in a 2 quart saucepan until crisp. Remove the bacon to paper towel to drain, reserving the drippings in the saucepan. Saute the bell pepper and onion in the reserved drippings until tender. Add the tomatoes and water. Bring to a boil. Stir in the uncooked rice, salt, pepper and thyme. Reduce the heat. Cook covered over low heat for 18 to 20 minutes. Stir in the prawns. Cook, covered, for 10 to 12 minutes or until the prawns turn pink. Sprinkle with the bacon.
